Do you have your Super Bowl menu planned? I’m assuming the majority of you do, but if you’re anything like me you might take the “walk in to the market on Saturday evening and hope the random things you toss into your basket will turn into party food” approach. I’m squeezing in a couple more finger food recipes today, for us culinary procrastinators, us spontaneous, kitchen creatives. This simple but super-delicious dip only requires 3 fresh ingredients, and comes together in minutes. Make room for the ingredients in your basket, and you won’t be disappointed.
Bleu cheese dip is the ring-leading, star performer of all dips in my opinion. It needs a crown or a scepter, or at least a little lapel pin. It pairs wonderfully with bacon, the King of all meats. What a delicious royal court….(welcome to my brain folks.) I can eat it by the spoon full, and am of the opinion that it is superior to ranch dip in every way possible. This stuff is amazing. Serve with crudites for a virtuous snack, give your favorite cobb salad with a healthy makeover, or my personal favorite – slather it on some homemade buffalo wings. Or …you know… just dip crunchy things in it.
Serves 12 – Recipe yields just over 1 cup of dressing, or 12 ounces. Nutrition is per ounce.

Let’s talk about the star performer on the ingredient list here for a second. It’s not sour cream, it’s not mayo…..it’s the ever-versitile fat free Greek yogurt. It’s thick and creamy, delicious, and actually has nutritional value, unlike mayo. I almost always swap Greek yogurt for mayo and sour cream in recipes. I love the tang it provides, and to my palate the taste is identical to good sour cream.
- 1 bunch scallions, green parts only (sliced very thin)
- 8 oz unsweetened non fat greek yogurt
- If you can’t find Greek yogurt, unsweetened regular will work too. Your dip will just be a bit thinner – more of a dressing consistency.
- 4 oz good bleu cheese (chopped into small chunks)
- 1 tablespoon red wine vinegar
- 1/2 teaspoon garlic powder
- Salt to taste (my cheese was salty enough, so I opted to leave this out)
Maybe you want to buy a big 16 oz tub of yogurt, and try out this recipe for caramelized onion dip from simply recipes too. The second half of my tub will certainly be dedicated to trying this one out, and I think the two dips would taste lovely as duo.
Mix ingredients, refrigerate for an hour before serving, and enjoy! Easy peasy.
